The Feely Brut Rosé
‘Come quickly! I’m tasting the stars’
Attributed to Dom Pérignon
Feely Brut Rosé was hand-picked early (late August). Natural fermentation with indigenous yeast and no sulfites added. The finished base wine was a dry, light rosé wine at around 11.5% alcohol and with good vibrant acidity, lightly sulfited before starting the sparkling journey. It then followed the second fermentation process outlined above and rested on the lees for 14 months before being riddled in gyropallets. The yeast and sugar for the second fermentation were certified organic. The dosage was the original wine plus 8g/litre of organic sugar to offset the vibrant acidity.

The Merlot used for this wine is on a north facing slope which provides the acidity, freshness and low alcohol required for the base wine.
This wine will age beautifully. With time the strawberry notes will become more like strawberry jam, on the palate it will remaine dry, but will become creamier and smoother.
Open and serve immediately. This wine does not need to be left to breathe.
Tasting Note: The wine has lovely red fruit – strawberry particularly – with good toasty elements from the autolysis both on the nose and the palate.
Serve well chilled.
Pair it with aperitifs, goat’s cheese, smoked salmon or trout, prawns or straight up for your celebrations.
